Precision Fermentation for Plant-Based Dairy Products

Standing Ovation is a French Startup pioneering a breakthrough precision fermentation process to produce non-animal-based proteins like casein, an essential component of milk protein. This innovative method preserves the nutritional, functional, and taste qualities of animal proteins, all while significantly reducing the environmental impact. 

The process behind Standing Ovation’s technology involves four key steps. First, protein-producing microbes are cultivated and fed plant-based sugars in fermenters, much like a brewery produces beer. Next, the cheese proteins are recovered and purified. These proteins are then mixed with plant-based or mineral ingredients, such as lipids and sugars. Finally, the traditional cheesemaking techniques of curding, draining, molding, salting, and ripening, are applied, resulting in high-quality, dairy-free products.  

Standing Ovation’s precision fermentation addresses a major global challenge: feeding a growing global population while conserving natural resources and reducing greenhouse gas emissions.
